The taste of Dehydrated Green Peppers is indistinguishable from fresh green peppers. Freeze Dried Green Peppers are very easy to make, with a small investment and quick payback, and Dried Green Peppers are perfect for home production. The method is now described as follows:
1. Drying process
1. Raw material processing: Use fresh green peppers with smooth surface and thick meat as raw materials, and wash them with running water.
2. Slicing: It can be cut with a cutting machine or by hand. Cutting specifications can be controlled by themselves. A sharper blade should be used to avoid streaks.
3. Boil: Put the green peppers into boiling water and cook for 2-3 minutes, remove and drain the water, which can keep the raw material bright and soft, and prevent the color from turning brown.
4. Drying: This step is the key. Large-scale production generally adopts mechanical ventilation drying process and steam heating. Spread the sliced green pepper strips evenly on the baking tray, layer on the baking tray, and dry at 60-70°C for 4-5 hours. When the moisture content of dry product is less than 5%, it should be cooled indoors.
In order to reduce the processing cost, the silica gel drying method can be used, that is, the desiccant silica gel and green pepper strips are placed in a large porcelain jar, with a layer of silica gel and a layer of green pepper. When the jar is full, close the lid to seal. Since no electricity is required, costs can be greatly reduced. This treatment generally takes about 4 days to keep the water content below 5%.
5. Packaging: After the Air Dried Green Bell Pepper is picked and removed, the dried product is packed in double-layer plastic bags with a film thickness of less than 0.08mm. Note that the storage temperature should be lower than 15 ℃, high temperature is easy to oxidize and deteriorate.
