Dehydrated Garlic slices are fresh garlic with good maturity, no trauma, no diseases and insect pests, white color and large size. They are sliced with water after pedicle removal, Petaling and peeling, and then rinsed with citric acid aqueous solution to reduce the activity of garlic enzyme. Note that rinsing must be completed within 24 hours after slicing, so as not to produce colored pigment due to oxidation and affect the color of the finished product. The rinsed garlic slices are controlled by a temperature control Dehydrator in three stages. The temperature is required to be controlled at about 60 ℃ in the early stage, increased appropriately in the middle stage, and controlled above 70 ℃ in the later stage, but the maximum temperature shall not exceed 78 ℃, so as to avoid coking of garlic slices and affecting the flavor and color. When the water content of garlic slices is reduced to about 5%, the finished product is obtained.
