Air Dried Green Cabbage Flakes

Air Dried Cabbage, also known as cabbage (Brassica oleracea var. capitata L.), is rich in nutrients and high in health care value. Dehydrated dried cabbage is one of the main export commodities of my country's DEHYDRATED VEGETABLES. In this paper, the microwave vacuum drying technology was applied to the drying process of cabbage, and the microwave vacuum drying characteristics of cabbage were studied. The influence of microwave vacuum drying process parameters on the quality characteristics of Chinese cabbage was studied, and the drying process was optimized. The optimal process parameters of cabbage; the effect of slow soaking process on microwave vacuum drying process of cabbage; the comparative study on the effect of different drying methods on the quality characteristics of Dehydrated Cabbage Flakes
